Idli Podi Recipe - Idli Milagai podi  is a healthy time-saver and always in stock in almost all of the houses in Tamilnadu. Idli podi is also called as idli chilli powder and chutney powder. Idli podi, the homemade chutney powder is better than the store-bought ones in all aspects, be it price, taste, purity and even quality. My mom used to give me a bottle of idli podi everytime we meet. I had watched her twice while she was preparing to know how to make idli podi.

I would say idli podi is simply the best accompaniment for idli and dosa especially when you are tired or lazy to enter into the kitchen. So, it is worth to make it and keep it in stock always.

Idli podi recipe I have given here will give you a tasty, flavorful and very nice aromatic idli podi. 

Serving suggestion:

Idli podi tastes best with the accompaniment of gingelly oil(sesame oil/till oil). You can also have curd as an additional accompaniment which is good for summer.

Storage suggestion:

Keep the idli podi in an air tight container. My mom used to make in large quantity for me since we meet once in 2 or 3 months. So, I used to keep and use it for few months. But, freshly made podi will have nice flavor and aroma. So, I have started preparing it on my own :) Since the idli podi recipe I have given here will not take too much of time to prepare, you can prepare in the below measurements and store it for a month(depends on usage).

Idli Podi Recipe - How To Make Idli Milagai Podi

Idli Podi Recipe - Ingredients:

  • Whole Urad dal(White variety)/Mulu ulunthu paruppu - 1 cup
  • Gram dal(Kadalaiparuppu) - 1/2 cup
  • Dry Red Chillies - 15 nos
  • Curry Leaves - 1/8 cup tightly packed
  • Asafoetida/Hing - 3/4 tsp
  • White Sesame seeds - 1/8 cup
  • Garlic flakes - 1 small pod peeled off(15 nos approx)
  • Salt - As required(1 tbsp approx. Add it incrementally)
  • Oil - 1 tsp(optional)



Idli Podi Recipe - Instructions:


1. Heat 1/2 tsp oil in a pan and roast urad dal till it turns golden brown color. Take care not to burn the dal. But it should be roasted well and nice aroma should come. Keep it aside in a plate.

2. Roast gram dal(bengal gram) in the same pan till it turns golden brown color in the same way. Keep it aside in the plate along with the dal.

3. Heat 0.5 tsp oil and roast red chillies till they get darkened and turn crispy. Ensure the chillies not get burnt. Keep it in the same plate along with the dals.

4. Saute curry leaves and 1/2 tsp hing in the same pan till the curry leaves turn crispy. Keep it in the plate.

5. Roast sesame seeds in the same pan till they splutter. Keep it in the plate.

6. Sprinkle 1/4 tsp hing in the plate and allow everything to cool.

7. Transfer everything to a mixie jar.

8. Grind everything in a mixie till they become coarse powder and not fine one.

9. Add garlic flakes and crystal salt in the mixie. Grind the podi to a semi fine powder consistency or your desired consistency. Now the idli podi is ready.

Keep it in an airtight container.

Notes:

1. The reason for roasting everything separately is, every ingredient takes different time to come into the required consistency. So, we are roasting them separately. Do not roast everything together.

2. Quantity of garlic flakes is individual preference. To get nice aroma, you need to add at least 15 flakes.

3. You can ignore the oil while roasting. Oil makes the roasting process an easy one and adds flavor to the idli podi.
